  • 4 medium zucchini smaller ones are less watery

Supporting Flavors

  • 2 tbsp olive oil or butter
  • 2 cloves garlic minced
  • salt and black pepper to taste
  • 1/2 cup grated Parmesan or mozzarella cheese
  • fresh herbs basil, parsley, or oregano

Optional Add-Ins

  • red pepper flakes for spice
  • 1/4 cup panko breadcrumbs for crunch
  • 1 cup ground turkey or chicken for stuffed boats
  • 1 cup tomato sauce for baking dishes

Instructions
 

  • Grilled Zucchini Ribbons: Slice zucchini lengthwise into ribbons, brush with olive oil, season, and grill 2–3 minutes per side until tender.
  • Cheesy Baked Zucchini Casserole: Layer thin zucchini slices in a dish with garlic, mozzarella, and optional breadcrumbs. Bake at 375°F for 20–25 minutes until bubbly.
  • Garlic Sautéed Zucchini: Sauté zucchini half-moons with garlic in olive oil for 5–6 minutes, then finish with parsley and Parmesan.
  • Stuffed Zucchini Boats: Scoop out zucchini halves, fill with ground turkey, onions, tomato sauce, and herbs. Top with mozzarella and bake at 375°F for 25 minutes.

Notes

Salt zucchini lightly before cooking and blot with a towel to avoid excess moisture. Freeze casseroles or stuffed boats after baking for longer storage.
