Preparation

  • Prepare the dressing by whisking together sour cream (or Greek yogurt), lime juice, olive oil, ground cumin, chili powder, salt, and pepper in a small bowl until smooth and well blended.
  • In a large mixing bowl, add cooked chicken, rinsed black beans, corn, diced red bell pepper, finely chopped red onion, halved cherry tomatoes, diced avocado, and chopped cilantro. Stir to combine.
  • Pour the dressing over the salad ingredients and gently toss until well coated.
  • Sprinkle the shredded cheese on top and add tortilla strips or chips if desired. Serve immediately or chill in the refrigerator until ready.

Notes

To keep the salad fresh, hold off on adding the dressing until just before serving. Use fresh ingredients for the best flavor.
