Instructions
Preheat oven to 375°F. Heat 1 tablespoon olive oil in an ovenproof skillet. Season chicken with salt and pepper, sear on both sides until golden. Transfer to a plate.
In the same skillet, add remaining olive oil. Stir in garlic, thyme, and red pepper flakes. Cook for 1 minute until aromatic.
Add chicken broth and scrape up any browned bits. Stir in sun-dried tomatoes, heavy cream, and Parmesan. Let it simmer until creamy.
Return chicken to the skillet, spoon sauce over the top. Transfer to the oven.
Bake for 15–20 minutes, or until chicken is cooked through and sauce is bubbling.
Remove from oven and let rest. Top with fresh torn basil and serve with your favorite sides.
