Ingredients
  

For the cookie batter

  • 1 box 15.25 oz White Cake Mix (about 3 cups)
  • 2 Large Eggs Ensure they are at room temperature.
  • 1/3 cup Vegetable Oil Also at room temperature.
  • 1/4 teaspoon Kelly Green Gel Food Coloring Adjust for desired color intensity.

For coating

  • 3 tablespoons Granulated Sugar For coating.
  • 6 tablespoons Powdered Sugar For coating.

Preparation

  • Preheat your oven to 350°F, adjusting the oven racks to the middle position.
  • In a large mixing bowl, combine the cake mix, eggs, and vegetable oil. Stir until well mixed and a smooth batter forms.
  • Add the Kelly Green Gel Food Coloring to the dough and mix thoroughly.
  • Prepare your baking sheet by lining it with parchment paper if desired. Drop rounded tablespoons of dough onto the sheet, spaced about 2 inches apart.

Coating and Baking

  • In a small bowl, combine granulated sugar and powdered sugar for coating.
  • Roll each dough ball in the sugar mixture before placing them back on the baking sheet.
  • Bake the cookies in the preheated oven for about 10-12 minutes, until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, ensure ingredients are at room temperature and avoid overmixing the dough. These cookies can be stored in an airtight container for up to 3 days.
