Preparation

  • In a large mixing bowl, combine the potato starch, all-purpose flour, garlic powder, salt, and black pepper.
  • Dredge the chicken thighs in the flour mixture, ensuring they are evenly coated.

Cooking

  • Heat the neutral oil in a skillet over medium-high heat.
  • Add the coated chicken thighs to the skillet and cook for approximately 5-7 minutes on each side until golden brown.
  • Remove the chicken from the pan and set aside.
  • In the same skillet, add minced garlic and the white parts of the green onion, sautéing until fragrant and slightly golden.
  • Incorporate the red chili flakes, then pour in chicken stock, honey, rice vinegar, dark soy sauce, and cornstarch.
  • Stir well to dissolve the cornstarch and simmer until the sauce thickens.
  • Return the cooked chicken to the skillet and toss gently in the sauce.

Serving

  • Plate the chicken thighs, drizzle with remaining sauce, and garnish with green onion and sesame seeds.

Notes

Be sure to coat the chicken thoroughly in the flour mixture for an even, crispy crust. Adjust the garlic and chili flakes based on your taste preferences. Store leftovers properly in an airtight container.
