Instructions
 

Preparation

  • Begin by adding the chicken breast, finely diced onion, minced garlic, frozen fire-roasted corn, frozen cauliflower rice, white beans, and diced green chilis to the slow cooker.
  • Pour in the lime juice along with the spices: kosher salt, cumin, chili powder, smoked paprika, black pepper, and cayenne.
  • Add the chicken broth to the mixture and thoroughly stir to ensure all ingredients are well combined.

Cooking

  • Securely place the lid on the slow cooker and set it to the low setting for about eight hours.
  • During this time, the chicken will become very tender, and the flavors will meld together.

Shredding Chicken

  • After eight hours, carefully remove the chicken from the slow cooker and transfer it to a large bowl.
  • Use two forks to shred the chicken and return it to the slow cooker.

Finishing Touches
