  • 1.5 lbs chicken thighs bone-in, skin-on or boneless
  • 1 tbsp olive oil
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme or other herbs you like

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a sheet pan with foil for easy cleanup.
  • Pat chicken thighs dry with paper towels and place in a large bowl. Drizzle with olive oil.
  • Sprinkle with salt, pepper, paprika, garlic powder, and thyme. Toss to coat evenly.
  • Arrange thighs skin-side up (if applicable) on the prepared sheet pan. Don’t crowd them.
  • Bake for 30–35 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let rest for 5 minutes before serving. Optional: Spoon pan juices over the chicken for extra flavor.

Notes

Serve with roasted vegetables, rice, mashed potatoes, or in wraps and salads. Try flavor twists with lemon zest, hot honey, or honey-soy glaze. Great for leftovers!
