  • 6–8 chicken thighs bone-in or boneless, skin-on or skinless
  • 1 tbsp olive oil or use avocado oil or butter
  • 1 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika

Optional Seasonings

  • garlic powder, onion powder, thyme, rosemary, soy sauce use any combo to suit your dish

Instructions
 

  • Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels to promote crisp skin.
  • Season chicken with salt, pepper, paprika, and any desired herbs or spices.
  • Heat a cast iron skillet over medium-high heat with oil. Place thighs skin-side down and sear until golden, about 5–6 minutes.
  • Transfer skillet to the oven. Roast for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
  • Remove from oven and let rest for 5 minutes before serving to retain juices.

Notes

This base recipe is incredibly versatile. Add harissa, soy-ginger glaze, or fresh herbs for different flavor profiles. Perfect for pairing with mashed potatoes, rice bowls, or leafy salads.
