Ingredients
  

  • 1 sheet frozen puff pastry 8.8 oz, thawed
  • 5 oz fresh raspberries
  • 4 oz cream cheese softened
  • 1.5 oz powdered sugar plus more for garnish
  • 0.5 tsp vanilla extract
  • 1 egg for egg wash
  • 1 tbsp cold water for egg wash
  • flour for dusting

Instructions
 

  • In a mixing bowl, combine cream cheese, powdered sugar, and vanilla. Stir until smooth and creamy.
  • In a small bowl, whisk the egg with cold water and a pinch of salt to create an egg wash.
  • Lightly flour your surface and roll the puff pastry into a 10.5-inch square, about ⅛-inch thick. Rotate as needed to prevent sticking.
  • Cut pastry into 9 equal squares. Add a small spoonful of cream cheese filling in the center of each and top with about 4 raspberries.
  • Brush one corner of the pastry square with egg wash, then fold diagonally to form a triangle. Press edges to seal.
  • Place pastries on a parchment-lined baking tray and freeze for 30 minutes.
  • Preheat oven to 400°F (200°C). Once pastries are chilled, brush tops with egg wash.
  • Bake for 25–30 minutes, or until puffed and golden brown. Let cool slightly on a wire rack.
  • Dust with powdered sugar and serve warm for best texture and flavor.

Notes

Chill the assembled danishes before baking for maximum puff. You can swap raspberries with blueberries, strawberries, or even a fruit jam swirl. Add lemon zest to the cream cheese for a citrusy touch.
