  • 1 tsp paprika Adds mild sweetness and color.
  • 1 tbsp lime juice Adds brightness.
  • 1 jalapeño (sliced, optional; for heat) Adjust according to heat preference.
  • 1 avocado (sliced, optional; for creaminess) Enhances flavor and texture.

Preparation

  • Slice the marinated chicken into bite-sized pieces.
  • In a skillet or grill pan over medium heat, add the sliced chicken and sauté until cooked through with a golden-brown color.
  • While the chicken cooks, prepare the fresh ingredients: dice the red onion, cube the pineapple, chop the cilantro, and slice the jalapeño.
  • Once the chicken is cooked, combine it in a mixing bowl with the cubed pineapple, diced red onion, chopped cilantro, chili powder, cumin, paprika, and lime juice. Stir until well combined.
  • Warm the tortillas in a dry pan or microwave until pliable.

Assembly

  • Place a generous spoonful of the chicken and pineapple mixture onto each tortilla, adding slices of avocado and jalapeño if desired.
  • Serve fresh with additional toppings as preferred.
