Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the finely chopped onion and cook until softened and translucent, about 3 to 5 minutes.
  • Stir in minced garlic and sauté for about 30 seconds.
  • Incorporate ground chicken and cook until browned, about 5 to 7 minutes.
  • Season with salt, black pepper, and Italian seasoning; add red pepper flakes if using.
  • Stir in the tomato paste and cook for 2 minutes.
  • Pour in diced tomatoes, chicken broth, and milk; stir to combine.
  • Bring to a gentle simmer and add pasta; stir to ensure it's submerged.
  • Cover and let simmer, stirring occasionally, for 10 to 12 minutes until pasta is al dente.
  • Reduce heat to low, add cheeses and stir until melted.
  • Remove from heat and let sit for a few minutes; garnish with parsley before serving.

Notes

Use lean ground chicken to keep the dish from becoming too greasy. Constantly stir the pasta while it cooks to prevent sticking. Be generous with cheese for enhanced creaminess.
