Preparation

  • Preheat your oven to 425°F.
  • In a mixing bowl, combine the olive oil, salt, garlic powder, pepper, and Italian seasoning. Stir until well mixed.
  • Add the chicken thighs to the bowl, coating them thoroughly in the oil and spice mixture.
  • Prepare your baking dish by placing the washed baby potatoes in a single layer.
  • Nestle the seasoned chicken thighs, skin side up, among the potatoes in the baking dish.
  • Scatter the halved shallots or quartered onion pieces around the chicken and potatoes, followed by the cherry tomatoes.
  • Drizzle any remaining oil mixture from the bowl over the vegetables.

Cooking

  • Place the baking dish in the oven and cook until the chicken thighs are golden brown and reach a safe internal temperature.

Notes

For extra crispy skin, pat the chicken thighs dry before seasoning. Ensure the chicken is at room temperature before cooking for even cooking.
