  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 bay leaf
  • salt and black pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté until softened, about 5 minutes.
  • Stir in garlic, thyme, and bay leaf. Cook for 1 minute until fragrant.
  • Pour in chicken broth and bring to a gentle boil.
  • Stir in shredded chicken, reduce heat, and let simmer for 15 minutes to blend flavors.
  • Add egg noodles and cook until tender, about 8 minutes.
  • Season with salt and black pepper to taste. Remove bay leaf.
  • Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

For meal prep, cook the noodles separately to keep them from absorbing too much broth when stored. To freeze, omit noodles and add them fresh when reheating.
