Ingredients
  

Main Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas soft
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • sour cream for topping, optional

Instructions
 

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • In a skillet over medium heat, brown ground beef and diced onion until the beef is no longer pink and onions are soft.
  • Add minced garlic, cumin, and chili powder. Stir and cook for about 1 minute until fragrant.
  • Spoon beef mixture down the center of each tortilla. Roll up tightly and place seam-side down in the baking dish.
  • Pour enchilada sauce over the rolled tortillas and top with shredded cheese.
  • Bake uncovered for 20–25 minutes until the cheese is melted and bubbly.
  • Let rest for 5–10 minutes, then top with sour cream or fresh cilantro if desired. Serve hot.

Notes

For a fun twist, try mixing cheddar and Monterey Jack cheese. Add beans or veggies to the filling for extra flavor and nutrition. Warm tortillas slightly before rolling to prevent tearing.
