Ingredients
  

For the Kabobs

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes The main protein for the kabobs.
  • 1 large red bell pepper, cut into chunks Adds sweetness and color.
  • 1 large green bell pepper, cut into chunks Adds a fresh flavor and color.
  • 1 medium red onion, cut into chunks Provides depth of flavor.
  • 1 pint cherry tomatoes Brightens the kabobs with freshness.
  • 8-10 pieces wooden skewers, soaked in water for 30 minutes Prevents burning during grilling.

For the Marinade

  • 1/4 cup olive oil Base of the marinade.
  • 3 tablespoons lemon juice Adds tartness and flavor.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon dried oregano Adds a Mediterranean touch.
  • 1 teaspoon salt Essential for seasoning.
  • 1/2 teaspoon black pepper Provides a mild heat.
  • 1/2 teaspoon paprika Adds color and mild flavor.

Instructions
 

Preparation

  • In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and paprika to create the marinade.
  • Add the cubed chicken to the marinade, toss gently to coat, cover with plastic wrap, and refrigerate. Marinate for at least 2 hours, or up to 8 hours.
  • Cut the red and green bell peppers and red onion into 1-inch chunks, and rinse the cherry tomatoes.

Assembly and Grilling

  • Thread the marinated chicken and prepared vegetables onto the soaked wooden skewers, alternating ingredients.
  • Preheat the grill to medium-high heat, ensuring that the grill grates are clean.
  • Place the assembled kabobs on the grill and cook for 12 to 15 minutes, turning every 3 to 4 minutes.
  • Make sure the chicken reaches an internal temperature of 165°F and the vegetables are tender and slightly charred.

Notes

For best results, allow kabobs to rest for a few minutes after grilling to retain juiciness. Feel free to swap in your favorite vegetables like zucchini or mushrooms.
