Instructions
 

Preparation

  • Cut the boneless, skinless chicken breasts into bite-sized pieces and place them in a large mixing bowl.
  • In a separate bowl, combine the olive oil, lemon juice, oregano, rosemary, garlic, paprika, salt, and pepper to create a marinade.
  • Pour the marinade over the chicken, toss to coat, and let it marinate for at least 20 minutes.
  • Soak bamboo skewers in water for 30 minutes if using, and skip this step if using metal skewers.

Grilling

  • Thread the marinated chicken onto the skewers, alternating with optional vegetables if desired.
  • Preheat the grill over high heat.
  • Cook the skewers on the grill for about 2-3 minutes on each side, or 8-10 minutes total until cooked through.
  • Let the skewers rest for 5 minutes before serving.
