Butter Mixture

  • 0.25 cup melted unsalted butter adds moisture and flavor
  • 3 cloves garlic, minced aromatic
  • 3 tbsp extra virgin olive oil richness
  • 1 tsp salt enhances flavor
  • 0.5 tsp black pepper adds warmth
  • 1 tsp Italian seasoning herbal notes
  • 0.5 tsp paprika mild smokiness

Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • Line a large sheet pan with parchment paper or aluminum foil.
  • In a small bowl, whisk together the melted butter, olive oil, minced garlic, salt, black pepper, Italian seasoning, paprika, crushed red pepper flakes, and lemon juice.
  • Place the chicken breasts on the sheet pan.
  • Spread two tablespoons of the butter mixture evenly on top of the chicken breasts.
  • In a medium mixing bowl, add the potatoes, carrots, broccoli, and red pepper.
  • Pour the remaining butter mixture on top of the vegetables and mix to cover them evenly.
  • Arrange the veggie mixture around the chicken breasts on the sheet pan.

Cooking

  • Bake for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are fork-tender.
  • For a crispier top, broil for 2 to 3 minutes at the end (optional).
  • Sprinkle fresh parsley and Parmesan cheese on top, if using.
  • Serve hot.

Notes

To customize, use different vegetables like zucchini or asparagus. Marinating chicken in the butter mixture for up to an hour prior to baking enhances flavor. Leftovers are great for quick lunches or dinners.
