  • boneless, skinless chicken breasts or thighs trimmed
  • chicken broth or stock
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 tbsp olive oil or butter

Instructions
 

  • Trim chicken, pat dry, and season with salt, pepper, and optional garlic powder or paprika.
  • Layer sliced onions and garlic in the bottom of the Crock Pot. Place chicken on top. Add any vegetables, beans, or potatoes you'd like.
  • Pour in broth, tomato sauce, or other sauce base of your choice.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  • Remove the chicken and shred or slice. Return to the pot to soak in the sauce.
  • Serve with rice, pasta, or tortillas. Store leftovers in fridge for up to 4 days or freeze for later.

Notes

Use thighs for extra moisture or breasts for a leaner meal. Add cream cheese or Greek yogurt at the end for a creamy twist. For more flavor, stir in curry paste or chipotle for spice.
