trimmed of excess fat

chicken broth or stock

Instructions
Pat chicken breasts dry. Season with salt, pepper, and garlic powder on all sides.
Layer chopped onion, carrots, and celery in the bottom of the Crockpot.
Place seasoned chicken breasts on top of vegetables in a single layer.
Pour 1 cup of chicken broth around the chicken without pouring directly on top.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until internal temperature reaches 165°F.
Let chicken rest for 5 minutes. Then shred or slice as preferred.
Serve warm with vegetables and cooking broth. Pairs well with rice, quinoa, or salad.
Notes
Reserve the broth left in the Crockpot — it's delicious over grains or as a soup starter. This chicken is perfect for meal prep or freezing.
