Ingredients
  

Core Ingredients

  • 4 boneless, skinless chicken breasts trimmed of excess fat
  • 1 cup chicken broth or stock
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • salt and black pepper to taste

Optional Add-ins

  • herbs thyme, oregano, basil, or rosemary
  • chopped vegetables carrots, celery, and bell peppers
  • lemon juice squeeze at the end

Instructions
 

  • Pat chicken breasts dry. Season with salt, pepper, and garlic powder on all sides.
  • Layer chopped onion, carrots, and celery in the bottom of the Crockpot.
  • Place seasoned chicken breasts on top of vegetables in a single layer.
  • Pour 1 cup of chicken broth around the chicken without pouring directly on top.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until internal temperature reaches 165°F.
  • Let chicken rest for 5 minutes. Then shred or slice as preferred.
  • Serve warm with vegetables and cooking broth. Pairs well with rice, quinoa, or salad.

Notes

Reserve the broth left in the Crockpot — it's delicious over grains or as a soup starter. This chicken is perfect for meal prep or freezing.
