Ingredients
  

Core Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 14 oz diced tomatoes optional, for heartier soups
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • salt and black pepper to taste

Optional Add-Ins

  • 1 cup frozen corn
  • 1 can black beans drained and rinsed
  • 1/2 cup cream cheese or heavy cream stirred in at the end
  • 1 jalapeño for spice

Instructions
 

  • Place diced onion, carrots, celery, and garlic into the crockpot.
  • Lay chicken on top of vegetables. Sprinkle with thyme, paprika, salt, and pepper. Pour in chicken broth (and tomatoes, if using).
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is fork-tender.
  • Remove chicken, shred with two forks, and return it to the pot.
  • Stir in optional extras such as corn, beans, or cream. Cook another 10–15 minutes to warm through.
  • Spoon into bowls, garnish with fresh herbs, and serve warm with bread or rice.

Notes

For a BBQ twist, stir in barbecue sauce and serve on buns. For Tex-Mex style, add cumin, chili powder, and top with avocado or tortilla chips. This recipe also freezes well — just thaw and reheat gently.
