Ingredients
  

Chicken & Seasoning

  • 1.5 lb boneless, skinless chicken breasts or thighs
  • 1 jar salsa your favorite variety
  • 1 packet taco seasoning optional
  • salt and pepper to taste

Instructions
 

  • Place chicken breasts or thighs into the crockpot.
  • Pour salsa over the chicken. Sprinkle with taco seasoning if using, and add salt and pepper to taste.
  • Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
  • Once cooked, shred the chicken with two forks and stir it back into the juices in the pot.
  • Serve warm with your choice of sides or in tacos, sliders, salads, or rice bowls.

Notes

Use spicy or mild salsa depending on your crowd. This recipe works great with frozen chicken too—just add 30 minutes to cook time. Store leftovers in the fridge for 3–4 days or freeze for up to 3 months. Reheat with a splash of water or extra salsa.
