  • 4 pieces boneless, skinless chicken breasts
  • Salt and black pepper, to taste for seasoning
  • 2 tablespoons olive oil for browning
  • 1 cup chicken broth for moisture
  • 1/4 cup fresh lemon juice about 2 lemons, for acidity
  • 1 piece lemon thinly sliced, for flavor and garnish
  • 3 tablespoons capers drained, for briny flavor
  • 3 cloves garlic minced, for aromatic depth
  • 2 tablespoons unsalted butter for richness
  • 1 teaspoon dried oregano for herbaceous notes
  • 1/2 teaspoon red pepper flakes optional, for a bit of heat
  • 2 tablespoons all-purpose flour optional, for thickening
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

Preparation

  • Begin by seasoning the chicken breasts with salt and black pepper on both sides.
  • Optionally, brown the chicken in a skillet with olive oil over medium heat for a couple of minutes on each side until golden.
  • Transfer the seasoned and optionally browned chicken to the crock pot.
  • In a mixing bowl, whisk together the chicken broth, fresh lemon juice, minced garlic, oregano, and optional red pepper flakes. Pour this mixture over the chicken.
  • Lay the thinly sliced lemon and drained capers on top of the chicken in the crock pot.
  • Cover the crock pot and set it to cook on low for 3 to 4 hours.

Final Steps

  • If desired, mix in the optional flour to thicken the sauce once the chicken is removed from the crock pot.
  • Stir in the unsalted butter until it melts completely.
  • Garnish with fresh chopped parsley before serving.

Notes

Serve this chicken piccata over pasta, rice, or alongside veggies for a comforting meal. Leftovers are great in salads or sandwiches.
