Preparation

  • Begin by placing the chicken breasts at the bottom of the slow cooker. Ensure they are laid out flat for even cooking.
  • Sprinkle the dry ranch dressing packet evenly over the chicken.
  • Add the onion powder and ground black pepper to the chicken, mixing them gently.
  • Open the can of Rotel diced tomatoes and green chilies, and pour the entire contents into the slow cooker over the chicken without draining.
  • Drain the can of whole kernel corn and add it to the slow cooker, mixing gently.
  • Drain and rinse the black beans, then add them to the slow cooker, stirring lightly.
  • Place the block of plain cream cheese on top of the mixture in the slow cooker.
  • Squeeze the juice from the fresh limes over the mixture in the slow cooker.
  • Pour in the chicken broth, ensuring the ingredients are well moistened.
  • Cover the slow cooker and set it on low for 6 to 8 hours.

Notes

This dish can be served over rice, in tortillas, or as a topping for nachos. Leftovers can be reheated easily.
