Preparation

  • Begin by cooking the penne pasta according to the package instructions. Once cooked to al dente, drain the pasta and set it aside.

Cooking

  • In a large skillet, heat the butter and cooking oil over medium heat. Add the diced onion, stirring occasionally, and cook until soft and translucent.
  • Add minced garlic to the skillet with the onions and cook for about one minute until fragrant.
  • Introduce the sliced red bell pepper and cook for a few minutes until softened.
  • Add bite-sized chicken pieces, sprinkle Cajun seasoning, and stir well. Cook until the chicken is lightly browned and cooked through.
  • Pour in the white wine (or chicken broth) and let it simmer for a couple of minutes.
  • Lower the heat and stir in the double cream, allowing it to gently simmer.
  • Add grated parmesan cheese, stirring until it melts fully into the sauce.
  • Adjust seasoning with salt and black pepper to taste.
  • Add the cooked penne pasta and toss to coat well with the creamy sauce.

Notes

For best results, avoid overcooking the chicken, adjust Cajun seasoning to your spice preference, and ensure to use heavy cream for a richer dish. Toss the pasta gently to prevent breakage.
