Ingredients
  

Core Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 4 medium potatoes diced
  • 3 carrots chopped
  • 1 onion sliced thin
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper

Instructions
 

  • Chop potatoes, carrots, and onion. Add them to the bottom of the crockpot.
  • Pat chicken dry. Rub with salt, pepper, thyme, and paprika.
  • Place seasoned chicken on top of vegetables. Pour broth over everything.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fork-tender.
  • Remove chicken and shred. Return to crockpot and stir to combine. Serve warm with broth and vegetables.

Notes

Make it creamy by adding cream of chicken soup or cream cheese in the last 30 minutes. Add curry powder or salsa for a bold twist. Leftovers are great for tacos or casseroles. For best texture, cut veggies into chunks and layer at the bottom.
