  • 2 tablespoons tomato paste Thickens and adds depth
  • 1 cup shredded Monterey Jack cheese For a creamy topping

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • In a baking dish, combine the finely diced onion, red bell pepper, uncooked rice, fajita seasoning, and optional cayenne pepper. Mix thoroughly.
  • In a separate bowl, whisk together the reduced-sodium chicken broth, mild green chilies, tomato paste, and olive oil.
  • Pour the broth mixture over the rice and vegetable combination in the baking dish and stir gently.

Cooking

  • Add the cooked shredded chicken, black beans, and frozen corn to the baking dish and stir to combine.
  • Cover the baking dish with aluminum foil.
  • Bake the casserole for 65-70 minutes or until the rice is tender.
  • Remove the foil and sprinkle the shredded Monterey Jack cheese over the top, then return to the oven for an additional 5-10 minutes.

Serving

  • Let the casserole cool for 5-10 minutes before serving. Optionally, garnish with cilantro, green onions, salsa, or avocado.

Notes

Ensure rice is fully submerged in liquid for proper cooking and adjust spice levels to taste. Allow casserole to rest for easier serving.
