Instructions
 

Preparation

  • Preheat your oven to 375°F and position the rack in the middle.
  • In a medium bowl, combine the cream of chicken soup and chicken broth. Mix well until smooth.
  • Lightly grease a 9×13-inch casserole dish using cooking spray.
  • Add the uncooked rice, cooked chicken, frozen vegetables, garlic powder, onion powder, Italian seasoning, pepper, scallions, and 1 cup of the grated cheddar cheese to the casserole dish. Toss to combine all the ingredients evenly.
  • Pour the soup and broth mixture over the ingredients in the casserole dish. Stir until everything is evenly coated and spread the mixture into an even layer.
  • Cover the casserole dish tightly with foil or a fitted lid.

Baking

  • Bake in the preheated oven for 45 minutes.
  • Remove the casserole from the oven and carefully take off the foil. Sprinkle the remaining 2 cups of cheddar cheese evenly over the top.
  • Return the casserole to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is fully cooked.
  • Let the casserole rest for 5 minutes before serving.

Notes

Ensure even mixing of ingredients for consistent flavor. For added crunch, consider a topping of breadcrumbs or crushed crackers. Adjust seasoning to taste.
