Instructions
 

Preparation

  • Begin by heating the olive oil in a large skillet or pot over medium heat.
  • Add the sliced onions and cook until soft and translucent, about 5-7 minutes.
  • Season the onions with salt and black pepper to taste.
  • Add the cut-up chicken pieces to the skillet and cook until browned on all sides, about 5-8 minutes.
  • Stir in the long-grain white rice, making sure to coat the grains well with the oil and flavors.
  • If using saffron, add a pinch to the pot and mix well.
  • Pour in about 3 cups of water, stirring everything together gently.
  • Bring to a gentle simmer, then reduce heat to low, cover, and cook undisturbed for about 20 minutes.
  • Remove from heat and let sit covered for an additional 10 minutes.
  • Fluff the rice with a fork and serve, garnished with freshly minced parsley or cilantro and lemon or lime wedges.

Notes

Leftovers can be stored in the refrigerator for about 3-4 days or frozen for up to 3 months. Reheat with a splash of water to retain moisture.
