Ingredients
  

  • 2 tbsp butter
  • 1 yellow onion large, diced
  • 3 stalks celery sliced
  • 0.5 cup matchstick carrots
  • 2 cloves garlic minced
  • 3 cups cooked chicken shredded (rotisserie works well)
  • 8 oz evaporated milk
  • 10.5 oz cream of chicken soup 1 can
  • 40 oz chicken broth
  • salt and cracked black pepper to taste
  • 16.3 oz canned buttermilk biscuits 1 can
  • 0.25 cup all-purpose flour for tossing biscuit dough

Instructions
 

  • In a large pot over medium-high heat, melt the butter. Add onion, celery, carrots, and garlic. Cook until softened and fragrant, about 5–7 minutes.
  • Add the shredded chicken, chicken broth, evaporated milk, and cream of chicken soup. Stir well and season with salt and pepper. Bring to a gentle simmer.
  • While the soup simmers, cut the biscuit dough into quarters and toss pieces lightly in flour.
  • Drop biscuit pieces evenly into the soup. Gently press them below the broth surface using a spoon.
  • Cover the pot and simmer for 8–10 minutes. Don’t remove the lid during this time to allow steam to cook the dumplings.
  • Uncover and gently stir to separate any dumplings sticking together. Check a dumpling by cutting in half to ensure it's fully cooked.
  • Turn off heat and let rest uncovered for 5 minutes before serving. The broth will thicken slightly as it cools.

Notes

This recipe is perfect for using up leftover rotisserie chicken. Add a sprinkle of thyme or parsley for extra flavor. The flour-tossed biscuit hack gives the dumplings perfect texture without clumping.
