  • 8 oz cream cheese (1/3 less-fat or regular, softened) Make sure it's fully softened before mixing.
  • 1 cup shredded pepper jack cheese (divided) Reserve 1/4 cup for topping.
  • 1 cup shredded medium or sharp cheddar cheese (divided) Reserve 1/4 cup for topping.
  • 1/2 cup buffalo sauce Adjust for desired spice level.
  • 1/2 cup light or regular ranch dressing Can substitute with Greek yogurt.

Main Ingredients

  • 2 1/2 cups shredded cooked chicken Use rotisserie chicken for convenience.

Preparation

  • Preheat the oven to 350℉.
  • In a medium bowl, combine the cream cheese, 3/4 cup of each type of cheese, buffalo sauce, and ranch dressing using a hand mixer until well blended.
  • Fold in the shredded cooked chicken until evenly distributed.

Baking

  • Pour the mixture into a 2-quart baking dish and spread it out evenly.
  • Sprinkle the remaining cheeses on top.
  • Bake for 30-35 minutes until bubbly and browned on top.
  • Garnish with green onions before serving.
  • Serve warm with chips and vegetables.

Notes

Serve immediately after baking for the best texture. The dip reheats nicely, making it fantastic for leftovers.
