Instructions
 

Preparation

  • Start by cutting the chicken thighs or breasts into bite-sized pieces, ensuring they are of even size for uniform cooking.
  • In a mixing bowl, toss the chicken with cornstarch, salt, and pepper until evenly coated.
  • Heat the oil in a large skillet over medium-high heat. Add the chicken in a single layer and let cook without stirring until browned.
  • Stir the chicken occasionally for even cooking until golden brown, then remove from the skillet.

Cooking

  • In the same skillet, reduce the heat and sauté minced garlic and ginger for about 30 seconds until fragrant.
  • Add ripe mango pieces to the skillet, cooking until softened for a couple of minutes.
  • Pour in soy sauce, honey (or maple syrup), vinegar, and sesame oil. Stir to combine and let bubble gently.
  • Return the cooked chicken to the skillet, stirring to coat each piece with the sauce and heating through.
  • Adjust seasoning with additional salt, pepper, or vinegar if needed before serving.

Serving

  • Garnish with chopped green onions and toasted sesame seeds. Serve with lime wedges on the side.

Notes

For best results, let the chicken marinate in cornstarch and seasonings for 30 minutes. Avoid overcrowding the skillet for even cooking.
