Easy Asado Chicken with Lemon Zucchini Sauté

Ingredients
  

For the Chicken Marinade

  • 3 lbs Chicken breast (lean protein)
  • 2-3 medium-sized Zucchini, diced (adds moisture and freshness)
  • 8 cloves Garlic, minced (boosts flavor)
  • 2 teaspoons Oregano (herbaceous touch)
  • 1 tablespoon Smoked Paprika (adds depth and warmth)
  • 2 teaspoons Cumin Powder (earthy flavor)
  • 1/4 cup Chicken stock (provides moisture) (60ml)
  • 1/4 cup Lemon juice (adds acidity) (60ml) + more for serving
  • 1/2 teaspoon Onion Powder (subtle sweetness)
  • 1/2 teaspoon Chili Flakes (spice for balance)
  • 1/4 cup Olive Oil (richness) (60ml)
  • to taste Salt and fresh cracked black pepper (seasoning)

Instructions
 

Preparation

  • In a bowl, combine the smoked paprika, cumin powder, chicken stock, lemon juice, onion powder, oregano, minced garlic, chili flakes, and olive oil. Stir well to mix everything.
  • Taste the marinade and adjust salt and lemon juice as needed.
  • Add the chicken breasts into the bowl, ensuring they are coated on all sides with the marinade.
  • Cover the bowl and refrigerate to marinate for at least 30 minutes.

Cooking Chicken

  • Heat a tablespoon of olive oil in your skillet over medium-low heat.
  • Place the marinated chicken breasts into the skillet, cooking until the internal temperature reaches 165ºF (74ºC).
  • Once done, remove the chicken from the skillet and cover it to keep warm.

Preparing Zucchini

  • In the same skillet, add the diced zucchini, seasoning with salt, pepper, and additional chili flakes as desired.
  • Sauté the zucchini for 2-3 minutes until it begins to soften.
  • If it looks dry, add a little more olive oil.
  • Pour the reserved chicken marinade over the zucchini and cook for another 3-4 minutes, stirring occasionally.

Serving

  • Divide the sautéed zucchini and its sauce onto plates.
  • Slice the chicken breasts and arrange them on top.
  • Garnish with fresh lemon slices and chopped parsley, if desired.

Notes

Allow chicken to marinate enough for full flavor and monitor skillet temperature when cooking.
