Ingredients

For cooking

  • 4 teaspoons avocado oil, extra-virgin olive oil, or butter, divided (for sautéing)
  • 1 pound ground chicken or beef (can substitute with sliced chicken breast, chicken thighs, or any other type of meat)
  • ¾ teaspoon salt, divided (for seasoning)
  • ½ teaspoon garlic powder (adds aromatic flavor)
  • ½ teaspoon onion powder (enhances savory notes)
  • ½ teaspoon oregano or Italian seasoning (adds herbaceous notes)
  • 1 tablespoon Worcestershire sauce (or substitute with more coconut aminos)
  • 3 tablespoons coconut aminos, divided (offers a slightly sweet flavor)
  • 2-4 tablespoons chicken broth or water (used for steaming vegetables)

Vegetables

  • 3 pieces bell peppers, thinly sliced (provides sweetness and crunch)
  • 1 piece yellow onion, thinly sliced (adds sweetness and flavor)

Cheese

  • 2 tablespoons pecorino romano cheese, freshly grated (adds sharp, salty flavor)
  • 4 slices provolone cheese (melts beautifully for topping)

Instructions

Cooking the Meat

  • Begin by melting butter or heating oil in a large cast iron skillet or other large skillet over medium heat.
  • Once hot, add the ground meat to the pan. Season with ½ teaspoon of salt, garlic powder, onion powder, and oregano or Italian seasoning.
  • Cook the meat until fully cooked, with no pink remaining.

Sautéing Vegetables

  • Remove the cooked meat from the pan and set aside, leaving the flavorful bits at the bottom.
  • Add remaining oil or butter to the skillet and heat again.
  • Add the sliced bell peppers and yellow onion, sprinkle with remaining salt, and add 2-4 tablespoons of chicken broth or water.
  • Cook until tender and fragrant.

Combining Ingredients

  • Return the cooked ground meat to the pan, pour in the coconut aminos, and any additional broth.
  • Stir to combine and heat through.

Final Steps

  • Evenly distribute grated pecorino romano cheese and slices of provolone over the mixture.
  • Cover with a lid to allow the cheese to melt.
