Preparation

  • Begin by preparing the chicken breasts. Boil the chicken until fully cooked, which typically takes about 15-20 minutes, depending on thickness.
  • Once done, remove them from the pot and let them cool slightly. You can shred or dice the chicken into small pieces.
  • While the chicken cools, chop the dill pickles, celery, and red onion into small, uniform pieces.
  • Grate the hard-boiled eggs in a bowl to ensure they blend well into the salad.
  • In a large mixing bowl, combine the chicken, dill pickles, celery, red onion, and grated eggs. Gently mix to combine.

Making the Dressing

  • In a separate bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, water, olive oil, garlic powder, salt, and pepper until smooth and creamy.
  • Taste and adjust the seasoning if needed.

Combining

  • Pour the dressing over the chicken mixture in your large bowl and fold it together gently to coat everything.
  • Finally, add the fresh dill and stir gently to combine.
