Main Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1 can white beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced green chilies 4 oz
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 3 cups low-sodium chicken broth
  • 4 oz cream cheese softened
  • 1/2 cup sour cream
  • fresh lime juice optional

Toppings

  • shredded Monterey Jack cheese
  • chopped cilantro
  • diced avocado

Instructions
 

  • Add the chicken, beans, corn, green chilies, onion, garlic, and all seasonings into the crockpot.
  • Pour in the chicken broth and stir everything together.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender.
  • Remove the chicken, shred it with two forks, and return it to the crockpot.
  • Stir in the cream cheese and sour cream until melted and creamy.
  • Taste and adjust seasonings, adding lime juice if desired. Serve warm with your favorite toppings.

Notes

Use softened cream cheese to avoid lumps. Add lime juice at the end for brightness. Shred chicken finely to absorb flavor well. Store in the fridge for up to 4 days or freeze for 3 months.
