This Crockpot White Chicken Chili is a creamy, comforting, and nourishing slow cooker meal. Made with tender chicken, hearty beans, and warm spices, it’s the perfect cozy dinner that’s also customizable and family-friendly.
Add the chicken, beans, corn, green chilies, onion, garlic, and all seasonings into the crockpot.
Pour in the chicken broth and stir everything together.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender.
Remove the chicken, shred it with two forks, and return it to the crockpot.
Stir in the cream cheese and sour cream until melted and creamy.
Taste and adjust seasonings, adding lime juice if desired. Serve warm with your favorite toppings.
Notes
Use softened cream cheese to avoid lumps. Add lime juice at the end for brightness. Shred chicken finely to absorb flavor well. Store in the fridge for up to 4 days or freeze for 3 months.
