  • 1.5 pounds chicken breasts or thighs trimmed of excess fat
  • 2 cans white beans drained and rinsed
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can mild green chiles
  • 3 cups chicken broth

  • 1 tsp ground cumin
  • 1/2 tsp oregano
  • 1/4 tsp chili powder optional
  • 1/4 cup sour cream or cream cheese add at end

Instructions
 

  • Place the chicken in the bottom of the crockpot.
  • Add beans, onion, garlic, green chiles, cumin, oregano, and chili powder.
  • Pour chicken broth over all ingredients and stir gently to combine.
  • Cover and cook on low for 6–8 hours or high for 4 hours.
  • Shred the chicken directly in the pot using two forks and stir to mix.
  • Stir in cream cheese, sour cream, or half-and-half for creaminess. Let it melt in before serving.
  • Serve hot with desired toppings like cheese, cilantro, avocado, and lime.

Notes

To make it spicier, add jalapeños or red pepper flakes. For a vegetarian version, swap chicken with more beans or cauliflower. Freeze leftovers for easy future meals.
