  • 1/8 tsp black pepper for seasoning
  • 1/3 cup sun-dried tomatoes adds tangy sweetness
  • 1/3 cup Parmesan cheese contributes savory depth
  • 1 cup fresh spinach offers color and nutrition

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the crockpot.
  • Season the chicken with salt, Italian seasoning, paprika, and black pepper, ensuring it's evenly coated.
  • In a mixing bowl, combine heavy cream and cornstarch and whisk until smooth.
  • Mince the garlic and mix it with an additional salt and black pepper.
  • Pour the garlic mixture over the seasoned chicken in the crockpot.
  • Chop the sun-dried tomatoes and add them to the crockpot.
  • Grate the Parmesan cheese and sprinkle it over the chicken and tomatoes.
  • Add the fresh spinach on top.
  • Cover the crockpot and cook on low for 6 to 8 hours.

Notes

Serve on rice or pasta, or use as a filling for wraps. Allow leftovers to cool before storage and recommend adding cheese for extra creaminess just before serving.
