Preparation

  • Begin by placing the chicken breasts or thighs into the crockpot, arranged evenly for even cooking.
  • In a mixing bowl, combine the teriyaki sauce, low-sodium soy sauce or coconut aminos, honey or brown sugar, minced garlic, grated ginger, rice vinegar, and sesame oil. Stir until combined.
  • Pour the sauce mixture evenly over the chicken in the crockpot, ensuring it's covered.
  • Cover the crockpot with its lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
  • Remove the chicken from the crockpot and shred it into bite-sized pieces.
  • In a small bowl, mix the cornstarch with the water to create a slurry and stir it into the remaining liquid in the crockpot to thicken the sauce.
  • Return the shredded chicken to the crockpot, stirring to coat it with the thickened sauce.
  • Sprinkle sliced green onions and sesame seeds over the dish before serving, if desired.

Notes

For best results, marinate the chicken in the sauce for an hour prior to cooking. Adjust sweetness to your taste, and consider adding vegetables like bell peppers or broccoli during the last hour of cooking.
