  • 2 pounds Boneless chicken breasts Lean protein

  • 1 teaspoon Sriracha or red pepper flakes Optional for heat
  • 2 tablespoons Cornstarch For thickening the sauce

  • 1 cup Bell peppers, chopped Adds color and texture
  • 1 cup Carrots, chopped Adds color and texture
  • 1 cup Snow peas Adds color and texture

Instructions
 

Preparation

  • Place the boneless chicken breasts in the bottom of the crockpot, spreading them out for even cooking.
  • In a separate bowl, mix together the honey, soy sauce, and minced garlic until well combined.
  • Pour the honey and soy sauce mixture over the chicken breasts, ensuring they are thoroughly covered.
  • If desired, sprinkle Sriracha or red pepper flakes over the mixture for added heat.
  • Add optional vegetables to the crockpot.

Cooking

  • Cover the crockpot with its lid and cook on low for about 6-7 hours or high for 3-4 hours.
  • When done, the chicken should be tender and easily shred with a fork.
  • Remove the chicken and vegetables from the pot onto a cutting board.
  • Mix cornstarch with a small amount of water to create a slurry, then stir it back into the remaining sauce to thicken.
  • Return the chicken and vegetables to the crockpot, tossing gently to coat in the thickened sauce.

Serving

  • Serve the honey garlic chicken warm, ideally over rice or with steamed vegetables.

Notes

For best results, marinate the chicken a few hours in advance and ensure even spacing in the crockpot. Store leftovers in an airtight container for up to three days or freeze for up to three months.
