  • 6 medium Russet Potatoes (Washed And Sliced) Thin slices for even cooking
  • 1 medium Yellow Onion (Peeled And Diced)
  • 1 clove Garlic (Minced)

Canned Ingredients

  • 16 ounces Canned Kidney Beans (Undrained, Low Sodium Preferred)
  • 15 ounces Canned Diced Tomatoes (Undrained)
  • 10.5 ounces Canned Cream Of Mushroom Soup

Seasonings

  • 1 teaspoon Kosher Salt
  • ½ teaspoon Dried Oregano
  • ¼ teaspoon Freshly Ground Black Pepper

Toppings

  • 1 cup Shredded Cheddar Cheese Added towards the end for melting

Preparation

  • Begin by browning the ground beef in a skillet over medium heat. Break it up into small pieces and stir frequently until browned, then drain the excess fat.
  • While the beef cooks, wash the potatoes thoroughly and slice them into thin rounds.
  • Place the sliced potatoes at the bottom of the crockpot, spreading them evenly.

Mixing Ingredients

  • In a separate bowl, mix together the kidney beans, diced tomatoes, cream of mushroom soup, diced onion, minced garlic, salt, oregano, and pepper.
  • Pour the vegetable mixture over the potatoes in the crockpot, ensuring they are completely covered.
  • Layer the browned ground beef on top of the vegetable mixture.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours until the potatoes are tender and the flavors meld.
  • About 15 minutes before serving, sprinkle the shredded cheddar cheese on top and allow it to melt.

Notes

For best results, slice potatoes evenly, mix thoroughly before layering, and avoid cooking on high heat to ensure even cooking. Consider adding corn or bell peppers for variations.
