Ingredients
  

  • 6-8 chicken thighs bone-in or boneless
  • 1 cup chicken broth or stock
  • 2 tbsp olive oil or butter
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions
 

  • Pat chicken thighs dry with paper towels to help seasoning stick.
  • Season chicken with salt, pepper, paprika, and thyme.
  • (Optional) Heat oil in a skillet and sear chicken 2–3 minutes per side until golden brown.
  • Place sliced onion and garlic at the bottom of the crockpot.
  • Lay chicken on top of aromatics and pour in 1 cup chicken broth.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken reaches 165°F.
  • (Optional) Remove chicken, whisk cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) into crockpot liquid, and cook until thickened for gravy.
  • Serve chicken with sauce over rice, mashed potatoes, or vegetables.

Notes

For variations, swap broth with BBQ sauce for sweet & sticky chicken, or use cream of mushroom soup and mushrooms for a creamy version. You can also add vegetables like carrots or potatoes directly into the crockpot for a one-pot meal.
