Ingredients

  • 6–8 chicken thighs bone-in, skinless
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • salt and pepper to taste

Optional Additions

  • splash of soy sauce adds umami
  • 1/2 cup cream cheese add in last 20 minutes for creaminess
  • 1 tbsp cornstarch mixed with 2 tbsp water for thickening

Instructions
 

  • Pat chicken thighs dry and season with salt, pepper, paprika, and thyme.
  • (Optional) Heat oil in a skillet and sear chicken thighs, skin-side down, for 3–4 minutes per side until browned.
  • Layer sliced onions and minced garlic at the bottom of the crockpot.
  • Place chicken on top of onions. Pour chicken broth around the edges so it covers about halfway up the thighs.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender and cooked through.
  • If desired, whisk cornstarch and water, stir into broth, and cook on HIGH for 10 more minutes to thicken.
  • Serve hot with juices spooned over. Optional: add chopped parsley or lemon juice before serving.

Notes

Boneless thighs work well for shredding. Add cream cheese at the end for a creamy version. This recipe is great for meal prep and freezer-friendly when assembled raw in a bag. Don’t cook more than 8 hours to avoid mushy texture.
