Preparation

  • Combine the diced tomatoes with their juices, chicken broth, chili powder, ground cumin, and kosher salt in the slow cooker. Stir until evenly blended.
  • Place the boneless, skinless chicken into the slow cooker, spreading it out in an even layer within the mixture.

Cooking

  • Cover the slow cooker and set it to LOW. Let the chicken cook for about 5 to 6 hours, until tender and easily shredded.
  • Uncover and stir in the drained black beans and frozen corn. Cover and continue cooking for 15 to 30 minutes until heated through.
  • Use forks to shred the chicken into bite-sized pieces directly in the slow cooker, mixing it with other ingredients.
  • Serve over your choice of cooked rice and add desired toppings.

Notes

For extra flavor, allow the chicken to marinate in the spices and broth before cooking. For a vegetarian option, replace chicken with additional black beans or plant-based protein. Serve with lime for added brightness.
