  • 2 lbs chicken breasts or thighs for richer flavor
  • 1.5 lbs baby potatoes halved
  • 1 cup chicken broth
  • 1 onion sliced
  • 3 cloves garlic minced

Optional Additions

  • fresh herbs like rosemary or thyme

Seasoning

  • salt and black pepper to taste
  • 1 tsp paprika
  • 1 tbsp olive oil for seasoning the chicken

Instructions
 

  • Pat the chicken dry and trim any excess fat. This helps the seasoning stick better and improves texture.
  • Rub the chicken with olive oil, salt, pepper, and paprika. Be generous—this is where the flavor starts.
  • Place the halved baby potatoes in the bottom of the crockpot. Lay the seasoned chicken on top.
  • Pour the chicken broth evenly over the contents. Add sliced onion and minced garlic on top.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and potatoes are soft.
  • Optional: Sprinkle with fresh herbs or a squeeze of lemon juice before serving. Spoon onto plates and enjoy.

Notes

For a richer dish, stir in cream or cheese during the last 30 minutes. Swap baby potatoes for sweet potatoes, or add green beans in the final hour for extra veggies. For meal prep, shred the chicken and mix with potatoes.
