  • 3 cups low-sodium chicken broth moisture and flavor

Aromatics

Thickening Agents

  • 2 tablespoons butter richness and moisture
  • 1/4 cup all-purpose flour thickens the dish

Instructions
 

Preparation

  • In a large mixing bowl, combine the uncooked rice, finely chopped onion, and minced garlic.
  • Add in the shredded sharp cheddar cheese to the rice mixture.
  • Season the boneless, skinless chicken thighs with salt and pepper. Place the seasoned chicken in the bottom of your crockpot.
  • Gently pour the broccoli florets over the chicken in the crockpot.

Making the Sauce

  • Melt the butter in a separate saucepan over medium heat. Sprinkle in the flour, stirring to create a roux.
  • Gradually add the low-sodium chicken broth to the roux, whisking continuously until the mixture thickens to a creamy consistency.

Cooking

  • Pour the thickened sauce over the layered ingredients in the crockpot.
  • Cover the crockpot and cook until the chicken is fully cooked and easily shreds with a fork.
  • Once cooking is complete, stir gently to combine the melted cheese and other ingredients.
  • Serve hot, garnished if desired.

Notes

This dish can serve as both a family meal or satisfying lunch for leftovers. Adjust seasoning to taste before serving. For a lighter option, serve over greens.
