  • 4 tbsp diced sun-dried tomatoes, drained Adds tanginess.
  • 1 tsp sweet paprika Adds a mild sweetness.
  • 1 tsp garlic granules Provides savory depth.
  • 1 tsp chicken bouillon If using wine, adds umami.
  • 1 cup sour cream or heavy cream Creates a creamy texture.
  • 1 tbsp cornstarch diluted in 2 tbsp cold water Optional, for thickening.
  • 2-3 tbsp grated Parmesan cheese Adds a savory note.
  • 2 tbsp chopped flat leaf parsley or fresh basil For freshness and color.

Instructions
 

Preparation

  • Start by preparing your chicken breasts, seasoning them generously with salt, pepper, and Italian seasoning.
  • In a skillet over medium heat, melt the unsalted butter and add the olive oil.
  • Add the seasoned chicken breasts to the skillet and sear them for about 3-4 minutes on each side.
  • Once seared, transfer the chicken to the crock pot.
  • Pour in the white wine or chicken broth, followed by the water if using wine.
  • Sprinkle in the diced sun-dried tomatoes, sweet paprika, garlic granules, and chicken bouillon if using wine. Stir gently.

Cooking

  • Cover the crock pot and let it cook on low for 6-8 hours, or high for about 4 hours.
  • Once cooked, remove the chicken breasts from the pot and stir in the sour cream or heavy cream.
  • To thicken the sauce, add the diluted cornstarch mixture into the pot, stirring well.
  • Return the chicken to the crock pot, sprinkle with grated Parmesan cheese and chopped parsley or fresh basil just before serving.

Notes

Sear chicken well for added flavor, adjust seasoning before serving, cook low and slow for the best texture.
