Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Pat chicken dry. Season both sides with salt, pepper, paprika, and thyme.
  • In a skillet, heat olive oil. Sauté onion and garlic for 2–3 minutes until fragrant.
  • Layer chicken in the Crock Pot, then top with sautéed onions and garlic. Pour in broth and soy sauce.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is fork-tender.
  • Serve with mashed potatoes, rice, or bread to soak up the flavorful juices.

Notes

Optional: Add baby potatoes or carrots to make it a one-pot meal. Add balsamic vinegar for extra depth. Swap soy sauce for coconut aminos for a lower-sodium version.
