  • 2 lbs boneless, skinless chicken breasts fresh or frozen, ensure it's fully cooked
  • 1 piece bell pepper, sliced adds crunch and sweetness
  • 1 piece onion, sliced adds flavor and aroma
  • 1 packet fajita seasoning spice and seasoning blend
  • 1 can diced tomatoes with green chilies adds moisture and mild heat

Instructions
 

Preparation

  • Place the chicken breasts in the crock pot, spreading them evenly across the bottom.
  • Add the sliced bell pepper and onion on top of the chicken.
  • Sprinkle the fajita seasoning evenly over the chicken and vegetables, and toss gently to combine.
  • Add the can of diced tomatoes with green chilies over the mixture.

Cooking

  • Cover the crock pot and cook on low for 6 to 8 hours.
  • Once cooked, check the chicken with a thermometer to ensure it reaches 165°F.

Serving

  • Shred the chicken in the crock pot using two forks, integrating it with the vegetables and juices.
  • Taste and adjust seasoning if necessary, then serve in warm tortillas with your choice of toppings.

Notes

Store leftovers in an airtight container for up to 3-4 days in the fridge and can freeze for up to 3 months. Reheat thoroughly before serving. For best results, follow the recommended cooking times.
