Instructions
 

Preparation

  • Begin by slicing the onion and bell peppers using a sharp knife for uniform slices.
  • Place the chicken breasts in the bottom of the crock pot in a single layer for even cooking.
  • Sprinkle the fajita seasoning evenly over the chicken to ensure all sides are well-coated.
  • Add the sliced onions and bell peppers on top of the seasoned chicken.
  • If using, pour the can of diced tomatoes over the top of the peppers and onions.

Cooking

  • Cover the crock pot with its lid and cook on low for about 6-7 hours.
  • Once cooking time is complete, check the chicken for doneness; it should be cooked through and easily shredded.
  • Shred the chicken and stir everything together in the crock pot to meld flavors.

Notes

Serve wrapped in warm tortillas with toppings like sour cream, cheese, or avocado. Leftovers are great for lunch or can be used in various dishes like quesadillas or salads.
