- 2 lbs chicken thighs or breasts boneless or bone-in
- 1 cup sauce of choice salsa, BBQ, Italian dressing, cream of mushroom soup, etc.
- 1 tsp salt to taste
- 1/2 tsp black pepper to taste
- optional add-ins carrots, potatoes, green beans, zucchini, etc.
Place chicken in the slow cooker. Season with salt and pepper.
Pour sauce of choice over the chicken. Add optional veggies if using.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is tender and cooked through (165°F).
If sauce is too thin near the end, remove the lid for the last 30 minutes to thicken, or stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water).
Shred chicken if desired and serve hot with sides.
Tips: Avoid overcooking chicken breasts as they can dry out; thighs are more forgiving. Resist lifting the lid too often. For extra flavor, sear the chicken first (optional).
Variations: Use BBQ, salsa, Thai peanut sauce, or creamy coconut milk instead of traditional sauces. Add any leftover veggies you have on hand.
